Diet to solve the problem of weight stability
* Saturdays, Sundays, and Mondays:
Any type of food is selected, in an unspecified quantity, without a calorie count.
* Tuesday, Wednesday, and Thursday:
- Breakfast: a certain type of fruit, drink with a cup of milk to be skimmed, or replace it with a cup of coffee without sugar.
- Lunch: Salad containing "lettuce, tomatoes and cucumber", with a piece of grilled meat or chicken breast, and eat bran bread, with natural orange juice.
- Dinner: a cup of skimmed milk, with a spoonful of honey.
*Friday:
- Breakfast: boiled egg, with a piece of low-fat cheese, and also a cup of coffee without sugar.
- Lunch: Tuna tin without oil, or a piece of grilled fish, and four leaves of lettuce, with a glass of grapefruit juice.
- Dinner: A piece of low-fat cheese, with bran bread, plus an apple.

One of my favorites lately is a simple toast spread. Usually I’ll do peanut butter or almond butter, bananas, and some cacao nibs or the classic avo toast, but I’ve been recently into plant-based yogurt. It’s filled with probiotics to help clean out your gut so I decided to put some on toast!

Ok, so I am on a but of a bean and mushroom kick. It just tastes so good and fresh, and I have a lot of it in my fridge, so, I am eating it. 😏

RECIPE
100g gluten-free rolled oats
40g coconut flakes
1tbsp chia seeds
2 big tbsp erythritol // brown sugar
50g frozen raspberries
50g peanut butter
1/2 banana, sliced
40-50g coconut milk
➡️ Put the first 5ingredients into a food processor and blend until mostly fine and powdery, then add remaining ingredients and bled until well combined. Then use your hands to form balls and, finally roll them in the extra coconut.

- 1 cup of sun dried tomatoes ⁣

- 1 onion, diced ⁣
- 2 tsp of red chili flakes⁣
- 1 tsp of dried oregano⁣
- 4 big handfuls of spinach ⁣

Recipe 🍽⁣
1. In a large frying pan, sauté garlic in 2 tbsp of olive oil for about 3 minutes. Add in the coconut flour and stir for another minute. Add the salt and 2 cups of almond milk.
2. Once the mixture has thickened a bit, add the remaining 2 cups of almond milk and stir for 2 minutes. Pour the mixture into a blender.
3. Add the sun dried tomatoes, nutritional yeast, and 2/3 cup of water to the blender. Blend until smooth and then set aside.
4. Rinse out your frying pan and heat up 1 tbsp of olive oil. Add in the onion and sauté for 3 minutes. Add chili flakes and dried oregano. Pour the sauce into the pan, along with the cooked chickpea noodles, and spinach.
5. Stir it up and serve! 😋

Haven’t had Greek food in forever & currently craving this delicious bowl! If you can’t handle Seitan, salmon, tempeh, & tofu are all super yummy alternatives that taste great with Mediterranean flavor! This bowl literally took 5 minutes to throw together. One of my biggest tips is to prep veggies & proteins at the beginning of the week. You don’t have to spend hours Slaving away in the kitchen. Cut & prepare a couple veggies & a variety of proteins & that’ll already set you in the right direction. That way, when hunger strikes, you’re good to go & don’t opt for an unhealthy, easy option!

Serves: 2

👉🏼 Ingredients
2 x 150 grams Wild sockeye salmon fillets
200 grams asparagus
200 grams cherry tomatoes
1 avocado
Marinade - mix and glaze salmon fillets (1/2 tbsp coconut aminos + 1/4 tsp salt + 1/4 tsp dried kelp + pinch chilli flakes)

👉🏼 Recipe
1. Preheat grill to high.
2. Add the asparagus and tomatoes to the pan. Put under the grill for 5 minutes until Tomatoes blistered.
3. Add the marinated salmon flesh side up on top of the vegetables.
4. Put pan back in oven for another 5 minutes.
5. Take out and turn salmon over. Put back in oven to crisp skin up for 1-2 minutes. (Avoid burning or charring)
6. Remove pan. Then half an Avocado.
7. Sprinkle over extra kelp + squeeze of lemon juice and season to taste. Voila.

Stuffed Chicken Breast with raisin and short whole grain brown rice. Serve with a Green Salad.
Ingredients:
4 pieces organic chicken breast weighing about 0.7 kg
115g long grain rice, cooked 60g raisins
2 Tbsp lemon juice 5 Tbsp vegetable oil Salt and ground black pepper
Method:
1. Wash and dry the chicken. Cut a slit along the thickest part of the breast, not quite cutting through the chicken to form a pocket.
For the filling:
1. Mix the rice, raisins, salt, lemon and pepper.
2. Spoon the rice filling into the chicken breasts, being careful not to overfill them. Close up and secure with a toothpick skewered through both sides.
3. Heat the oil in a frying pan and gently place the chicken in the pan.
4. Cover the pan and fry the chicken parcels for about 15 - 20 min- utes, turning them occasionally until golden and cooked through.
Note: You can wrap the breasts once stuffed, with smoked bacon or pancetta.
Breakfast is served!

Mexican Chicken and Cauliflower "Rice" Casserole⠀
Makes 2 Serving⠀
Per serving:⠀
1 Lean⠀
3 Greens⠀
3 Condiments⠀

Ingredients:⠀
2 1/2 cups grated cooked cauliflower⠀
1/2 cup mild Rotel diced tomatoes⠀
1/4 cup salsa⠀
1/8 tsp salt⠀
1/8 tsp pepper⠀
1/8 tsp garlic powder⠀
1 cup reduced fat Mexican cheese, grated⠀
9 oz chicken breast (should yield 6 oz cooked), chopped⠀
1/2 tsp low sodium taco seasoning⠀
1 tsp olive oil⠀

Directions:⠀
Season chicken w/taco seasoning and toss w/olive oil. Marinate for at least 4 hours. Grill, bake or broil. Set aside.⠀

In a large bowl, combine grated cauliflower, Rotel tomatoes, salsa, salt, pepper, and garlic powder. Pour into a casserole dish (I used a 9-inch pie plate), layer w/chicken and then cover w/cheese. Bake at 350°F 25 minutes or until cheese is melted. Divide into 2 equal portions.⠀

Day 17: Dinner - paprika and lemon topped mackerel on steamed kale with roasted courgette, cauliflower and beetroot.
Coldest day of the winter yet, so a hot tea or something cozy would seem like the obvious choice, I know. But, I’ve been feeling a little under the weather so it was time to blend up my orange + apple + ginger juice for a little self-care from the inside, out. Ya feel me? It’s super easy, inexpensive, and it’s a total wellness dream that you can make at home, and you can skip the expensive juice bar. ⇢ To make it, I blended up one blood orange, one cara cara orange, 1/2 of an organic gala apple, one handful of ice, and some grated fresh ginger in my @vitamix. I almost forgot how good this juice is, but now that blood oranges and cara cara oranges are in season, I definitely will be making this again (and again), and so should you! The best!

These little beauties don’t look very appetizing but OH MY were they delicious! I found a turkey meatloaf recipe off Pinterest and adjusted it a bit. Measurements below are approximate. One 20oz package of 93% lean ground turkey, one large egg, 3/4 C cooked fine chopped broccoli, 3/4 C riced cauliflower, 3/4 C cooked fine chopped carrots, 1/2 a toasted Joseph’s whole wheat wrap crunched up (breadcrumb substitute), 1 Tbs Worcestershire sauce, 1/2 Tbs each salt and pepper, 2 Tbs braggs nutritional yeast and a few dashes of #MrsDash #cleaneats #bariatricmealprep #yum #selfcare #weightlossjourney #rny #turkeymeatloaf

I toasted our spelt wholemeal & topped with coconut yoghurt, cinnamon, toasted hazelnuts & honey from a friends farm who we swap bread with. Got to love the country👏👏👏

Happy MLK Day!!! I am taking advantage of this long weekend by making Chickpea Veggie Curry for #lunch 😋 I have been loving eating more plant-based meals recently & this curry definitely hit the spot. 😍 It was spicy + flavorful + warm + satisfying & perfect for prepping for the week ahead. I have really been enjoying chickpeas recently and LOVE all the different things you can make with them. Although this is definitely not the best picture, trust me, this tasted AMAZING 😉 I paired the curry with a sweet potato + steamed cauliflower + mixed greens + avocado 🥑 so GOOD! 😍

Here are the guidelines for what I did—> 1 can chickpeas, drained & rinsed
1 onion
3 cloves garlic
1 zucchini
1 carrot
1 10 oz can of diced tomatoes with green chiles (for extra spice ;))
1/2 t. Paprika
2 t. Curry powder
1/2 t. Garam Masala
1/4 t. Ginger
1/4 t. Turmeric
1 t. Garlic powder
Salt & Pepper

Directions:
Chop up onion & garlic & sauté in medium saucepan until fragrant. Add in chopped veggies, diced tomatoes, chickpeas, & spices. Let everything simmer until veggies are cooked through & flavors have been absorbed (about 20 mins).

*NOTE * These are the guidelines for what I did, but feel free to make a bigger batch (this made about 2-3 servings) & use whatever veggies you have on hand.
