Happy Wednesday! We’re halfway through the week 💃🏼 Recipe is below 💛

HOW TO 👉🏼
In a food processor, blend till smooth:
1 can chickpeas, rinsed and well drained
1/2 cup creamy almond butter
1/3 cup maple syrup
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp each: baking soda & baking powder
1/4 tsp salt
Optional: 1/4 cup oat flour if you prefer a more firm texture!

Grease a 9x5 inch loaf pan, and line with parchment paper. Pour batter in. Dough will be sticky! Wet your fingers with water to press dough into an even layer. Sprinkle with a bit of cinnamon if desired. Bake at 350 for 25 minutes or until toothpick comes out clean. Cool in pan on wire rack. Cut loaf into squares. Store leftovers in the fridge. DEVOUR 🤤
Went vegan tonight. Made this healthy salad with roasted asparagus, avocado and strawberries. I used a tarragon, honey balsamic and really loved the flavor combo. I have noticed so many grim faces in Germany. It is such a contrast to the Caribbean. It strikes me every time we get back. I know many people there aren’t as well off as the people here and still they seem more content. At least this is my impression. I might be wrong. Zucchini Noodle Frittata with Goat Cheese and Sun-Dried Tomatoes #makeitmonday
1 lean/2 green per serving - to make full lean green meal serve with a small green salad and 2T of low carb dressing as a healthy fat.
Ingredients
1 medium zucchini, spiralized into spaghetti
Pepper, to taste
1/4 cup sun-dried tomatoes (not packed in oil), sliced
4 large egg whites and 1 whole egg, beaten
1 1/2 tablespoons crumbled goat cheese
Directions

Place an 8-inch skillet over medium-high heat. Once the pan is heated, add the zucchini noodles and season with pepper. Toss and cook for 3 minutes, or until noodles have softened. Evenly distribute the sun-dried tomatoes over the zucchini noodles, pressing them down.

Pour the eggs over the zucchini mixture and then sprinkle with goat cheese. Let cook for 1 minute, or until eggs set on the bottom.

Cover, reduce heat to medium and cook for 5–7 minutes, or until eggs are cooked through and edges are lightly brown. Remove from heat and divide into four slices. Serve immediately.

Egg-cited for lunch 🤤
Another quick and easy breakfast idea: Banana Lemon “Poppyseed” Pancakes! Super easy to make, and with a hidden superfood:

To make:
-1 banana
-1 egg
-2tbs of lemon juice
-2tbs chia seeds +more for topping .
.
-mash the banana in a small bowl
-add the egg, lemon juice, and chia seeds, and mix with a fork
-with a nonstick pan, add a little bit of butter, and cook the batter in one big pancake
-flip when the side down looks browned, then serve when cooked
-we recommend a little bit soft/raw in the middle
-top with homemade blueberry syrup (recipe in French toast post) or maple syrup
Ready for a decadent but healthy pasta-like dish:

This recipe takes a little investment of time but it’s so worth it!

1 large spaghetti squash
6 pieces of bacon, cut into 1-inch pieces
1 cup full-fat coconut milk (canned)
1 large egg
1 tsp sea salt
Fresh pepper to taste
1 tbsp ghee or coconut oil
½ chopped onion
3 cloves minced garlic
(optional: 2-3 cups of steamed veggies such 
as broccoli, cauliflower, zucchini, carrots or wilted spinach) .
🥒
Heat oven to 400 degrees. Cut washed spaghetti squash in half lengthwise and scrape the seeds from the middle using a large spoon. Drizzle each half with olive oil and season with salt, and place cut-sides-down on a lined baking sheet and place in the oven.
Roast until tender, about 45 to 50 minutes. Remove from the oven and, using a fork, scrape each side to remove the “spaghetti” strands. Place in a greased casserole dish.
While the squash is 
baking, cook the bacon strips on the stove until they’re at your desired level of crispness. Place on paper towel to soak up excess oil.
Whisk together the coconut milk, egg, sea salt and pepper and set aside.
Add the ghee or oil to a pan to melt and add 
onion to saute until soft. Add garlic and saute for 2 minutes. Add the coconut milk mixture and cook, stirring constantly until thickened, about 5-7 minutes. Add the bacon bits, and pour over the spaghetti squash in the casserole dish. (Optional: you can add 2 to 3 cups of steamed vegetables such as broccoli, carrots or spinach at this point.) Bake at 400 degrees for 15 to 20 minutes and serve.

*Be sure to use organic spinach and nitrite-free bacon. If you want it vegan, use egg and bacon substitutes.

In need of a quick and healthy breakfast that’s ready to go almost instantly? Try these overnight oats! ⏰

1/3 cup rolled oats
1 tbsp chia seeds
1/2 tsp cinnamon
1 mashed banana
Pinch of Salt
1/2 cup unsweetened almond milk 🥛 .
Throw all ingredients together in a tupperware container and mix well. Seal with lid and allow to set for at least 1 hr or overnight. Before eating, give one final stir and feel free to adjust flavors. Top with favorite toppings. 💕

I don't always spend half an hour making my food look like a glorified mess.
So here's a simple bowl of oats. Sometimes I just want to eat my food right away and not have to wait. Lately I've been pretty busy and finding the time to create an aesthetically pleasing photo has been hard to grab. So I've been really busy taking some time to think clearly and enjoy some quiet moments.

It couldn't be more simple than this bowl of oats.
•1/2 cup of oatmeal
•1/4 cup of flax meal
•1 cup of coconut milk
Blend ingredients in blender and then warm it up!
I topped mine with some peanutbutter, raspberies, and coconut.

Springing into the new season with a healthy bowl!

100g extra firm tofu
1 1/2 cups romaine lettuce
1/2 cup cherry tomatoes
1/2 a large cucumber
2 tbsp pepitas
1/2 tbsp nutritional yeast
1 tsp cumin
2 tbsp mottapa dip

Cubd up the tofu and add to a frying pan with a touch of water. Sprinkle on nutritional yeast and cumin and saute until brown.
Add everything in bowl and enjoy 🥗

Sweet Potatoes in a Smoothie? Umm.. YES PLEASE!

I was out of bananas the other day and wanted to make a smoothie.
I like bananas in my smoothies. Not all the time, but they just seem to make them extra creamy and delicious… so…

I saw that I had some cooked sweet potatoes in my fridge and figured I try them out as a substitute.
OH MY! And I am thankful I did. WOWZA! This is totally my new favorite smoothie recipe.
I even just cooked up a bunch of sweet potatoes JUST so I could have them on hand to make more!

If you’re a #smoothie lover like myself. Try out this recipe!
You can even add or take away some of the spices if you want.
Chocolate Sweet Potato Smoothie

1 to 1 ½ cups non-dairy milk
1 banana
1 cooked and peeled sweet potato
1 to 2 scoops Barlean’s Chocolate Silk Green Powder (or cocoa powder)
1 Tablespoon chia seeds
1 heaping Tablespoon nut butter
1 teaspoon Maca Powder
1 scoop (about 1 teaspoon) turmeric powder (I used Megafoods Daily Turmeric)
½ teaspoon Reishi mushroom powder (can be left out)

Add all the ingredients into a blender and blend well, until smooth.
Adding in extra milk if needed

Grab a straw and enjoy.
