Ingredients:
-1 1/2
-pounds assorted sweet potatoes, peeled and cut into 1-inch chunks -6
heads baby bok choy, halved lengthwise -1/4
cup minced fresh ginger -2
tablespoons red or brown miso paste -2
tablespoons lime juice -2
tablespoons cider vinegar -2
teaspoons maple syrup -2
cloves garlic, minced -6
tablespoons canola oil 
Recipe:
Cooked red or white quinoa
Sesame seeds
Place a steamer basket in a large skillet or pot. Add water to just below the basket. Bring to boiling; reduce heat. Add sweet potatoes to basket; cover. Steam 10 minutes. Add bok choy; cover. Steam 5 minutes more or until tender.
Meanwhile, for Miso Dressing, in a small bowl whisk together the ginger, miso, lime juice, cider vinegar, maple syrup, and garlic. Gradually whisk in canola oil until combined. Serve veggies over quinoa; drizzle with Miso Dressing. Garnish with sesame seeds.

1/2 large head cauliflower, cut into small florets (about 4 cups)
7 tablespoons extra-virgin olive oil
1/4 teaspoon red pepper flakes, plus more for topping
Kosher salt
2 cloves garlic, minced
1 14-ounce can whole peeled tomatoes, crushed by hand
1/2 cup fresh parsley, roughly chopped
1/3 cup pitted kalamata olives, roughly chopped
1 tablespoon capers, rinsed
Finely grated zest of 1 lemon, plus 2 teaspoons lemon juice
1 pound refrigerated pizza dough, at room temperature
4 ounces fresh mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese
Recipe:
Prepare cauliflower dough and transfer it to a pizza peel or another inverted baking sheet. Spread the tomato sauce all over the dough, leaving a 1/2-inch border. Top with the mozzarella, then scatter the roasted cauliflower on top and sprinkle with the parmesan. Slide the pizza (on the parchment) onto the bottom hot baking sheet. Bake until the crust is golden, 20 to 25 minutes. ‭

Pesco­vegetarians were 43 percent less likely to develop the cancer over 7.3 years—a lower risk than vegans or vegetarians overall.  So how can you get the benefits of fish without eating it? Some plant foods—notably flaxseeds, wal­nuts, and soybean and canola oil—contain an omega-3 fat called alpha linolenic acid (ALA) found in fish. While fish can convert ALA from algae and other sea plants into EPA and DHA, humans can do so only to a very limited degree—less than 1 percent is converted, according to some estimates. PIZZA CRUST: 1 head cauliflower, "riced" (yielding 6 cups cauliflower rice*) 1 1/2 DIY flax eggs (1 1/2 Tbsp (10 g) flaxseed + 4 Tbsp (60 ml) water 1/4 tsp sea salt 3 Tbsp Vegan Parmesan Cheese (or nutritional yeast if avoiding nuts) 1 tsp dried oregano 1 tsp dried basil 3 cloves garlic 1 heaping Tbsp cornstarch 1 Tbsp cornmeal (or gluten-free flour // to discourage the dough from  sticking to the parchment)
TOPPINGS: Puréed tomatoes or Easy Marinara Vegan Pesto Sautéed or fresh vegetables (e.g. bell pepper, onion, mushroom) Fresh basil Red pepper flake Vegan parmesan cheese
INSTRUCTIONS:

In a large mixing bowl, prepare the flax egg and let rest 5 minutes. Then add cauliflower rice, sea salt, vegan parmesan cheese, oregano, basil, garlic, and cornstarch.  Stir. until “dough” forms.  Line a baking sheet or pizza stone/pan with parchment paper. Sprinkle with a little cornmeal or gluten-free flour to help prevent the pizza from sticking when slicing.  Then use your hands to carefully spread the dough into a circle or square (depending on shape of pan // see photo) and keep the crust slightly less than a 1/2-inch thick with a slightly thicker outer perimeter.  Bake crust for 45 minutes. Then remove from oven and carefully flip the crust. Do so by first loosening the crust from the bottom layer of parchment with a spatula and then laying another sheet of parchment paper on top of the crust. Then grab both sheets of parchment and gently flip. Arrange the crust back on the baking pan. Return to the oven and bake for an additional 10-12 minutes more or until the edges appear golden brown and the center feels mostly firm to the touch. ‭

Tired of your usual grilled cheese sanswiches? Then try this post-workout “Roasted Tomato Basil Grilled cheese Sandwich”.
* Preheat the oven to 400°F.
* Line a baking sheet with parchment paper and place the tomatoes on the sheet. Roast for 15 minutes until the tomatoes are starting to burst.
* Place the tomatoes in a bowl and carefully mash with a potato masher to extract the juice. Strain the tomatoes completely and reserve the juice in a small bowl. Mix 1 tablespoon of the juice into ¼ cup mayonnaise until it has the consistency of a sauce (double the tomato juice and mayonnaise for extra sauce). Reserve the strained tomatoes and sprinkle them with kosher salt.
* Spread each slice of bread with tomato mayo. Top with 1/4 of the strained tomatoes, shredded mozzarella, and some torn pieces of basil. Sprinkle the toppings with a pinch of kosher salt and top with another slice of bread.
* Heat a grill pan to medium high and brush it with butter. Cook the sandwiches until toasty and the cheese is melted, about 3 minutes per side. Serve immediately. ‭ ‭

8 ounces Linguine Pasta
2 Tablespoons olive oil
6 Tablespoons butter
4 cloves garlic, minced
1 teaspoon red pepper flakes
1¼ pound large shrimp
salt and pepper to taste
1 teaspoon italian seasoning
4 cups baby spinach
½ cup parmesan cheese
2 Tablespoons parsley, chopped
1 Tablespoon lemon juice
INSTRUCTIONS:
In a large pot cook the pasta in boiling water according to package directions. Drain and set aside. Using the same pan, heat olive oil and 2 Tablespoons of butter. Add the garlic and red pepper flakes and cook until fragrant. Add the shrimp and salt and pepper to taste. Cook until the shrimp start to turn pink. Add italian seasoning and spinach and cook until wilted. Add the pasta back to the pot with the remaining butter, parmesan, and parsley. Still until mixed and butter is melted. Add the lemon juice before serving and serve while hot. ‭ ‭

Ever tried a healthy chia seed jam for breakfast? Here’s the recipe.
Ingredients:
2 1/4 cups quartered frozen strawberries (I like to freeze fresh, ripe strawberries when they're in season)
1 - 3 tablespoons honey (or coconut nectar, maple syrup, agave nectar, etc.)
2 1/2 tablespoons chia seeds
Step 1
Place frozen strawberries and 1 tablespoon of sweetener in a medium-sized pot over medium heat.
Step 2
As the strawberries start to thaw, mash them with a fork or the back of a spoon and bring the mixture to a simmer.
Step 3
Reduce heat to maintain a simmer for about 8 minutes, stirring frequently, until the strawberries are fully broken down and starting to thicken.
Step 3.5
This is optional, but if you'd like a smooth jam, place the cooked strawberries in a blender and blend until smooth. Then place the mixture back in the pot over medium-low heat. (If you want to keep the texture of the broken down strawberries, skip this step.)
Step 4
Taste the mixture and, if needed, stir in more sweetener until it's to your liking.
Step 5
Add the chia seeds to the pot and bring to a simmer, stirring constantly for 2 minutes.
Step 6
Remove from the heat and pour into a glass jar. Let cool on the counter for at least 30 minutes, then place in the fridge until completely chilled. Seal the jar with a tight-fitting lid after the jam is fully chilled.
Step 7
