When I get a request to make fish for dinner, I usually reach for salmon. But not tonight!! I picked up this gorgeous piece of #cod
and needed to prepare it in a way that would please my husband and 3 kids. Well, aside from my 7 year old turning her nose up at the #capers,
it was a huge hit!! So I tried my hand at a #codpicatta.
I first cut the cod into single serving pieces, patted them dry and dredged them in a flour mixture of well, #flour, #paprika, #groundcoriander #saltandpepper.
In a large pan I heated some olive oil and a good pat of butter. Once that was melted, I placed the dredged pieces of fish into the pan. Let them cook for about 4 or 5 minutes, then carefully turn them over and cook for another couple minutes. Remove the fish and set aside. In that same pan, add 3/4 cup of chicken broth, and the juice of a lemon. Let reduce a bit then add some capers. You can also add some minced garlic along with the stock and lemon if you like. Once the sauce comes together, bring the cod back into the pan and let it finish cooking inside the sauce. It should only take a couple minutes, but it depends on the thickness on your fish. Chop some fresh parsley and sprinkle it on top before serving! I served this with some mixed veggies and a spinach salad. Honestly, I would’ve preferred some mashed potatoes, but I’ve had a really long day!
